Located in the heart of Barbagia, in the town of Oliena, Caseificio Ianas has been operating in the dairy sector since 1994. It is family-run,where production is entrusted to the skilled hand of the cheesemarker Pietrino Boe,who skills and purchases are derived from the lessons received from studies specializing in the dairy sector. After gaining experience in other dairies,he decided to create hi own dairy trying to in the right combination of tradition and innovation,specializing in the production of the very ancient frue cheese, dating back to about 5 thousand year ago, of which it is found losing track. The Dairy has achieved the same result of creating cheeses with a manufacturing process perfomed by highly tecnological machinery, which does not alter and modify the raw material. Each milk processing is different because its characteristics change according to the season or other variables, selecting to create a selected production of cheeses which changes quality, goodness and freshness because making cheese is an ART.
