This cheese is recognized by its goodness and quality of maturation when at room temperature it produces (the Tear)
A form of oil and salt that sweats from the internal pores.

Its intense aroma and enveloping taste is suitable for grating or accompanied with a good red wine (Nero D’avola)
Once you try it you will not be able to do without it.

Storage: You can store it (Whole Form) in a cupboard, if the temperature does not exceed 15 º C.

Once you have opened the form or purchased in Pieces, store it in the refrigerator.
Before consuming it, take it out of the refrigerator 2 hours before consuming it.
